Japanese Green Tea

All Japanese green teas come from the camellia sinensis tea plant. 30% of the nutrition of green tea leaves is water soluble (this means the nutrients emerge when steeped in water) - catechin, theanine, caffeine, vitamin C, and more. 70% of the nutrients of green tea leaves is non-water soluble - vitamin E, beta carotene, dietary fiber, and more.

Because Obubu uses simple, natural processing, their teas are made of the whole leaves. The sencha harvested in the spring are very tender and we recommend you eat the leaves after your third brewing. This is how you will receive 100% of the full nutritional benefits of Japanese green tea! 

Obubu harvests in the Spring, Summer, and Fall -
each with different characteristics. We currently offer Kabuse Sencha.

Sencha Brewing Instructions: one teaspoon of tea, one half cup room temperature water. Pour hot water into the teacup to warm it. When the heat can be felt on the outside of the cup, that is the time to add the tea and water to the teapot. Discard water from cup. Brew for 90 seconds and pour out every drop of tea. This first brewing will be sweet. For the second & third brewing use hot water (212 F) and serve immediately. You will taste more astringency in these brewings.

    Sencha Spinach / Chagara     

Another way to get the full health benefits from your tea is to eat the leaves. After 2-3 pourings Obubu Sencha tea leaves will have fully opened. Just drizzle a small amount of soy sauce, sprinkle bonito flakes on top, and your Sencha Spinach is ready to be enjoyed!

Maccha Brewing Instructions: If you're using a Chasen (bamboo whisk) you can add 1/2 teaspoon of maccha directly into a cup or bowl, then slowly add one cup of hot water (175° F) and whisk briskly in a side-to-side motion until frothy.

Without a Chasen, you will need to make a smooth paste by adding 1/2 teaspoon of maccha and 2 ounces of hot water and mixing well. After the paste is made, slowly add the remaining cup of hot water continuing to mix well and drink promptly.

Genmaicha, Hojicha, Bancha Brewing Instructions: one teaspoon of tea, one cup hot water. Place tea and boiling water (212° F) in teapot and let brew for 90 seconds - 3 minutes. You can reuse your tea leaves for two or three pourings by adjusting your brewing time. Excellent as Iced Tea, too!

You've heard of the health benefits of green tea, but do you know the facts?

Japanese green tea comes from a tea plant called Camellia sinensis, and the name of the tealeaf is called Sencha. The green tea produced from Japan most closely resembles the look and chemical composition of the fresh tealeaf due to the minimal amount of processing. The different types of green tea are all based on the age of the plant, when the leaves are harvested, and how the leaves are cared for before and after they have been harvested. Matcha is the powdered form of Sencha leaves and has the highest amount of retained nutrients of all green teas. After the leaves are picked, they are dried and then ground into a fine powder.

**Matcha, unlike regular teas, allows you to consume the entire leaf and all its nutrients. Just a few of the health benefits of Matcha are; 70 times the antioxidants of orange juice, 10 times the nutrients of regular green tea, 8 times the beta carotene content of spinach. Matcha is easy to incorporate into recipes, too.

Theanine is a unique amino acid found in the leaves of green tea. Theanine is quite different from the polyphenol and catechin antioxidants for which green tea is typically consumed. In fact, through the natural production of polyphenols, the tea plant converts theanine into catechins. This means that tea leaves harvested during one part of the growing season may be high in catechins (good for antioxidant benefits), while leaves harvested during another time of year may be higher in theanine (good for anti-stress and cortisol-controlling effects). Three to four cups of green tea are expected to contain 100-200mg of theanine.

Every day, new findings from the international scientific community lend credibility to tea's healthy properties. Heart Health: Research suggests that drinking 3 to 5 cups of tea per day can offer significant heart health benefits ranging from reducing heart attack risk to lowering Low Density Lipoprotein (LDL) cholesterol, or "bad" cholesterol.  Colon Cancer: Results of a recent study found tea drinkers to have an approximate 42% reduced risk of colon cancer as compared to non-tea drinkers. This has been found to be true for men and women. Bone Health: Two recent studies found tea-drinking women had higher bone mineral density (BMD) measurements compared to non-tea drinkers, especially habitual tea- drinkers of 6 years or more.  Source STI

 The Ohsaki Study
An unprecedented medical study shows a significant association with drinking green tea and the decrease in all causes of mortality in general and with mortality caused by cardiovascular disease (CVD).  The study was done on over 40,000 subjects over an 11-year period. The study also measured tea consumption as associated with reduction in mortality due to cancer.  The study showed no association with the decrease in cancer deaths. The abstract was published in the prestigious Journal of the American Medical Association and was referred to as The Ohsaki Study.
